Leyrat XO Elite Vieille Réserve: The Finest from Fins Bois
This single estate Leyrat Cognac Elite XO is produced using 100% Ugni Blanc grapes and contains blends between 15 and 20 years old. The blend also contains a small portion of eaux-de-vie from the 1920s! Thanks to the estate’s location, it has excellent chalky soil and above average sun exposure, rendering the eaux-de-vie produced distinct and unique when compared with others of the Fins Bois region.
The unique triple aging process means that the woody, earthy tones of Layrat’s Cognacs are subtle and never overbearing, even for the oldest Cognacs. First left to age in new casks, they are then placed in 4-12-year-old casks, before finally being matured in “exhausted” or older casks to finish the process.
The cellar masters at Leyrat have created a mouthwatering masterpiece that has an incredibly complex character, a dominant floral bouquet opens up onto nutty notes and a succession of spice and sandalwood. Nutmeg and vanilla add a beautiful balance to this Vieille Réserve, ending on a punchy, peppery finish.
Those more refined palates may pick up hints of violet, a typical characteristic of this particular cru. How to Enjoy: A round and rich Cognac for your sensory pleasure, pair this XO Elite with a dessert or cheese course, a creamy Comté would complement the nutty nature of this exquisite Cognac.
Leaving to aerate allows the aromas to develop and intensify, experience a whole new plethora of flavors when you come back to this Cognac after a few minutes, the second nose will certainly surprise you!
